Homemade Ketchup

Description

A nice rich Ketchup that is natural and healthy, try to make sure you use low salt/no salt Tomatoes if you have a sodium concern.

Ingredients

4cfire roasted tomatoes
2clvgarlic, chopped
1⁄4tpepper, ground
1⁄4tcloves, ground
1⁄4tallspice, ground
1⁄2ccider vinegar
1tpaprika, ground
1⁄2tcelery seed, ground
1⁄2tcayenne pepper

Instructions

Cook together the first 5 ingredients for about an hour at a low simmer then let cool enough to blend really well.

If your really picky at this point you can run through a sieve or strainer to get out any small bits of skin/garlic left.

Throw it back in the pot and simmer until reduced by about 2/3rds.. It should be thicker then your average Ketchup at this point..

Add the rest of the ingredients and mix together, tasting and adjust any of the spices as you see fit. If you find its not sweet enough now is the time to add the sugar of choice while its still hot so it melds in nicely. If calorie intake is not a large concern real Maple Syrup can be a nice touch to the flavor.

Now you can let cool fully and sit a few hours.. Taste again add more spices if needed.
